Allways Coffee Release 011 by Dawn Patrol Coffee

Welcome to release number 11 from Allways Coffee. This fornights roaster is no stranger to the Specialty Coffee industry, they've been in the rural outskirts of Adelaide sourcing, roasting and serving some of the best coffees in the world since 2014. This will be Dawn Patrol's second spin on the lazy susan of coffee that is Allways Coffee. In 2022 Dawn Patrol have moved from their small roasting shed in Kangarilla to, well..... a big shed in Chandlders hill, sharing space with famous Australian wine makers - Watkins Wine. Dawn Patrol always have a bursting  range of coffees on offer that span numerous coffee growing regions and processing methods. The transparency and tracebility of their coffee's is of a high standard, something that every coffee roaster should aim for. This release we have 3 stunning coffees that represent Dawn Patrol Coffee excellently. 

Edwin Noreña, Colombia

This is special. Edwin Noreña of finca Campo Hermoso has produced a stunning Pink Bourbon (a mutation between the red and yellow Bourbon variety) This lot under went a Purple Honey Process. This is where the coffee cherries were harvested based on a higher sugar content i.e they were so ripe they almost turn purple. Then they are subject to a full cherry fermentation in water, then 25% of the of the flesh is removed before more fermentation. After this the cherries are left to dry on raised beds for 28 days. 

To pull off this detailed and intricate processing method requires great skill and care. This coffee is no exception, the team at Campo Hermoso and Dawn Patrol Coffee have delivered the goods!

Nyamugari, Burundi

The Nyamugari washing station sits at 1792 masl and is based in Gishubi, a commune of Gitega Province in the Kirimiro region, central Burundi. The station was established in 2014 and has since been managed by Adélard Kwizera who oversees the washed honey and natural process coffees. This is an important washing station employing 8 full time and 160 casual staff in peak season. It allows 400 farmers each year to drop off cherries for processing.

Toucan Espresso Blend is a 100% washed coffee blend comprised of 50% Costa Rican and 50% Mexican Coffees. Central american Coffees are usually clean, chocolatey less  milder than their South American siblings.  This blend is roasted for milk coffee lovers bringing all the rich chocoaltey flavours you need.
